Our boneless chicken thighs are marinated overnight in a house-made blend of pineapple juice, soy sauce, fresh garlic, ginger, brown sugar, and a touch of sesame oil for authentic island-inspired flavor before being grilled over an open flame. The result is incredibly juicy chicken with smoky, caramelized edges and the perfect balance of sweet and savory.
Served alongside is a classic Hawaiian macaroni salad, made the traditional way with tender elbow macaroni, shredded carrots, and our scratch-made mayonnaise. We make our mayonnaise in-house using 100% avocado oil, giving it a rich, creamy texture without the soybean or canola oils found in most commercial mayonnaise.
The plate is finished with char-grilled pineapple, adding a naturally sweet, caramelized touch, and a crisp garden side salad with fresh greens, cucumber, shredded red cabbage, red onion, and whole cherry tomatoes to balance the richness of the meal.
